Mussels are one of the Galician regions gastronomic treasures, and escabeche is a traditional method of cooking seafood in an acidic sauce. As per the Spanish escabeche recipe, Cabo De Peñas remove the succulent Galician mussels from their shells and cook and marinate them in a tangy "pickled" sauce of wine vinegar, spices, salt and sunflower oil. Truly a shellfish lovers dream come true.

Serve these mussels on some crispy crackers, with crusty bread to soak up the most delicious sauce, or in a life-changing seafood pasta.
