The name strozzapreti means “priest choker” in Italian, and refers to a priest who enjoyed it so much that he would eat it quickly enough to choke on it. It resembles a long cavatelli, hand rolled to look like a rolled-up towel, and popular in Emilia-Romagna, Tuscany and other regions of Italy.
