Ford Farm’s Dorset Red Smoked Cheddar is created by following the traditional Cheddar-making process, except that the heat of the milk is lowered and less stirring is done, resulting in a milder flavour and creamier texture. After pressing into a block and maturing for three months, it is cold-smoked over oak chips overnight, giving it a distinct mellow smoky flavour.
A fresh, vibrant red wine will complement the mellow, lightly smoked flavours of this delicious Dorset Red.

Ford Farm is located in the rolling Dorset Downs of Southwest England. It is one of the few remaining traditional farmhouse cheddar makers, using methods and recipes that date back many hundred years. They use the highest quality milk, sourced from local, free-range dairy herds. The cheddars are aged and graded regularly by in-house graders to check their progress, and released when they have achieved optimum flavour.
